Bringing Filipino flavor to the streets
A short menu, cooked the long way
Swabe is run by a group of Filipino cousins and friends who got tired of explaining where to find real Filipino food in Queens, so they parked a truck on Queens Boulevard and started cooking it themselves.
The menu is short, and that is deliberate. Beef is simmered down for hours until it falls apart. Lumpia are rolled by hand. Every rice bowl gets a sunny-side egg, because that is how it is eaten at home. Nothing sits under a heat lamp waiting for you.
Order at the window, grab one of the folding chairs on the sidewalk, and eat it hot. That is the whole idea.
