Bringing Filipino flavor to the streets

A short menu, cooked the long way

Swabe is run by a group of Filipino cousins and friends who got tired of explaining where to find real Filipino food in Queens — so they parked a truck on Queens Boulevard and started cooking it themselves.

There are only eight things on the board, and that is deliberate. Beef is simmered down for hours until it falls apart. Lumpia are rolled by hand. Every rice bowl gets a sunny-side egg, because that is how it is eaten at home. Nothing sits under a heat lamp waiting for you.

Order at the window, grab one of the folding chairs on the sidewalk, and eat it hot. That is the whole idea.

The ones people come back for

Start here

Four dishes that tell you everything about how this truck cooks.

Chaolong Palawan — beef and rice noodles in broth with bean sprouts, mint and scallions $12 Signature

Chaolong Palawan

Sweeter and richer than the pho it borrows from — closer to a beef stew poured over noodles, coloured with annatto instead of chili. Bean sprouts, mint and fall-apart beef.

The dish Grub Street came for

Pares Mami — beef pares served over egg noodles in broth with scallions $12

Pares Mami

Two Manila classics in one bowl: sweet-savoury beef pares and a hearty egg-noodle mami soup. Deeply beefy, garlicky, and built for a cold night on the Boulevard.

Beef Tapa Rice Bowl — marinated beef with garlic rice, sunny-side egg, tomato and cucumber $12 Most ordered

Beef Tapa Rice Bowl

Savoury marinated beef, garlic rice and a sunny-side-up egg. Filipino comfort food in one satisfying bowl — the breakfast plate that works at any hour.

Pork Belly Sandwich — crispy pork belly, egg, tomato and cucumber in a toasted bun $10

Pork Belly Sandwich

Crackling-crisp pork belly with cucumber, tomato, vinegar mayo and a sunny-side egg in a soft toasted bun. Crunchy, creamy and messy in the right way.
